Luqaimat are little bite-sized fluffy sweet honey balls (the Greek version of donuts), which are deep fried to golden and crispy perfection.
Mix all ingredients together by hand until all well combined
Leave prepared dough covered with plastic wrap for ~2 hours
Mix again to make sure all air has been released from the dough
Prepare the oil for deep frying
Pour the mixture in pipping bag, cut the end of it for about 1 inch
Start pipping the dough and you can cut the size by hand or scissors. if by hand or by scissors, make sure to have oil in a bowl next to you, and dip the fingers or scissors in oil every once in a while to make sure it is easy to cut.
The dough will need to be double fried. For the first one, Fry the balls until they are light golden
After all batch is fried for the first time, to be light golden color, let it rest for a while. you can leave between half hour to 2 hours.
Second Fry: heat the oil again (the same oil used for the first fry). start adding balls to second fry as much as your pot can fit. don't over load it
Fry until they are golden color
Remove from oil with a Frying Spatula Strainer, and dumb immediately in the cooled previously prepared Sugar Syrup.
Place in serving dish and can be sprinkled with pistachio powder
